Protein Oatmeal Cream Pies!
Macros for each Oatmeal Cream Pie:
121 Cals, 16g Carbs, 1g Fat, 12g Protein!
Ingredients (makes 10 Oatmeal Cream Pies):
60g PEScience Gourmet Vanilla Select Protein (“FDL” saves you 30%)
60g All Purpose Flour
16g Coconut Flour
80g Finely Ground Quick Oats or Oat Flour
8g Zero Cal Sweetener of your choice
8g Baking Powder
100g Egg Whites
140g Unsweetened Apple Sauce
140g Plain Non Fat Greek Yogurt
Ingredients for Cream Filling:
30g PEScience Gourmet Vanilla Select Protein
15g Powdered Sugar
6g Sugar Free/Fat Free White Chocolate Pudding Mix
3g Zero Cal Sweetener of your choice
50g Plain Non Fat Greek Yogurt
1️⃣ Preheat oven to 350 Degrees F. Add your dry ingredients and your wet ingredients to two separate bowls. Mix each bowl till all ingredients are combined. Now combine dry with wet and mix till you get a thick batter like consistency.
2️⃣ Take your cookie scooper and add 10 cookies to your oven safe pan covered in parchment paper. Flatten out your cookies a little bit because they will not rise much during baking and we want that flat oatmeal cream pie cookie. Add to oven for 6-7 minutes.
3️⃣ Once done, add cookies to your cooling rack. While those are cooling, you will make up your cream filling. Add your dry filling ingredients into a bowl and mix to avoid clumping. Now add your cold water to the dry and mix. Then add your greek yogurt and mix that in. By now you should have a nice thick icing. Add to fridge to keep cool.
4️⃣ Once cookies are cool, add you filling to each bottom cooking and add your top cookie! Now you have Protein Oatmeal Cream Pies!
